Cheese Packaging Optimizes Brie and Camembert Maturation
French packaging converter Lawson Mardon Morin worked with DuPont to develop permeable cheese packaging that keeps delicate, soft cheeses from spoiling, while allowing them to properly ripen.
DuPont™ Bynel® and DuPont™ Selar® were used together, to give the packaging film the precise barrier properties needed to optimize cheese maturation and preserve flavor.
To prevent soft cheese from spoiling, Lawson Mardon Morin wanted to create cheese packaging that would not inhibit the delicate maturation process that lets the cheese breathe, while it continues to ripen. It also needed to control the amount of moisture that escapes, as camembert and brie have different weight loss requirements.
Working with DuPont™, Lawson Mardon Morin developed DuPont™ Expeco® (Extrusion à Perméeabilites Contrôlées), a paraffin-free packaging film for soft cheese. This film combines DuPont Bynel® adhesive resin and DuPont Selar® barrier resins to provide better ripening cheese control.
With its limited permeability to water vapor, Bynel® is used as a bonding agent. Selar® PA 3426 provides oxygen and carbon dioxide barriers, as well as excellent transparency. These resin layers are laminated onto paper, using the extrusion-coating process.
Thanks to the combination of Bynel® and Selar®, DuPont™ Expeco® packaging allows for:
- Optimized cheese maturation: Bynel® and Selar® provide full control of the water vapor/oxygen/carbon dioxide gas exchange critical to the cheese-ripening process.
- Flavor preservation: Bynel® and Selar® preserve the cheese, without affecting flavor.
- Customization: The structure’s barrier properties can be fine-tuned to comply with specific cheese weight loss requirements during maturation.
Brands that use Expeco® cheese packaging include Chamois d’Or Cheese, a mild, creamy cow’s milk cheese from France that is aged for 30 days.
