WELLENCE™ Gluten Free stabilizer is used in formulations of gluten free food products. WELLENCE™ Gluten Free is based on cellulose and does not contain gluten nor are any gluten containing grains used in its production. WELLENCE™ Gluten Free mimics the structural ability of gluten without compromising on taste, structure and softness. WELLENCE™ Gluten Free meets regulatory requirements for gluten free claims and ensures cakes and breads achieve desired shape and volume, and retain it when cooled. The product also enables consistent dough handling, increased processing tolerance prevents the collapse of bread during baking, controls crumb structure and volume and increases softness of the crumb over shelf life.
Oil Uptake Reduction
WELLENCE™ Smart Fry stabilizer is used in formulations of food products. WELLENCE™ Smart Fry is based on cellulose and does not contain any fat or oil, it can be used to formulate food product with reduced fat-oil content. WELLENCE™ Smart Fry reduces oil uptake during frying in fried reformed potatoes, French fries and coated food products (poultry, fish and meat). A fat and calorie reduction of 30% to 50% can be achieved in the final fried product, with minimal impact on the texture or sensory profile. This enables ‘reduced fat’ labelling claims as defined in local regulation. WELLENCE™ Smart Fry portfolio is designed to help reduce oil pick-up in fried foods.
