VERSENE™ CA Stabilizer
Preserving Color, Flavor and Clarity
Trace metals occur naturally in all plant and animal tissues, are normally found in processing water and can also be introduced by processing equipment. By accelerating undesirable chemical reactions, trace amounts of soluble iron, copper, and other metals can degrade the quality, shelf-life, and value of food products. Flavor, color, clarity, stability, and vitamin content can all be negatively affected. Canned foods or beverages and emulsified products such as mayonnaises, dressings and sauces are particularly vulnerable.
To address this challenge, Dow designed its VERSENE™ CA chelating agent for trace metal control.

Color & Taste Stability
VERSENE™ CA chelating agents effectively control copper and iron traces under food processing conditions by deactivating problem metals. This means the metals cannot react with your ingredients and cause product degradation resulting in color loss in beverages, development of off-flavors of canned vegetables or fish and rancidity of mayonnaise. Because VERSENE™ CA has excellent heat and pH stability it is compatible with most food systems and processes. This high stability means reliable protection for your foods and beverages.
